Condiments
1 lg kirby cucumber
1/8 tsp salt
1 1/2 T minced shallot
1/8 tsp salt
1 T red wine vinegar
1 cup yogurt
1 T fresh dill
1/4 tsp pepper
1. Seed the cucumber and grate. Set in a colander over a bowl and sprinkle with 1/8 tsp salt. Let drain for at least 10 minutes, up to 30 min.
2. Mince the shallot and set aside in the vinegar and additional salt to marinate while preparing the other ingredients.
3. Mince the dill.
4. Combine all the remaining ingredients. Refrigerate for 30 min to let the flavors marry.
Yields a generous 1c
Note: if using dried dill, use 1 tsp. instead of 1 Tbs.
